Vegetable Lasagna

When students step into a cafeteria in Fresno Unified School District, they have a wide array of dishes to choose from. But no matter what dish they pick, it’s sure to be both healthy and delicious.
“We offer so many different options for our students,” says Nutrition Services Director Amanda Harvey. “Along with breakfast and lunch, we have a fresh fruits and vegetables program using local produce, an afterschool snack program and a supper program.”
By skillfully preparing new foods that are as delicious as they are nutritious, the Nutrition Services team is doing more than just filling hungry bellies. They’re helping students develop healthy eating habits that last into adulthood. Their scratch-cooked vegetarian cheese lasagna is a particular student favorite — brimming with flavor, packed with fresh, healthy ingredients and topped with bubbling, golden-brown mozzarella.
To Amanda, that’s one of the best parts of the job. “Being able to show students to love healthy, nutritious food and experience the joy that delicious meals bring is incredibly exciting,” she said.
